3:11You are listening to the Tudor Dixon Podcast, and today we are going to talk

3:15raw milk. I know you're going to go, how can you talk about raw milk

3:19for that long? But there's this new innovation.

3:21You've heard a lot about raw milk, but I know that people are going, you

3:25know, we hear the administration and Maha and everybody's saying raw milk is safe, but

3:30is raw milk safe? And I've had some people on the podcast who have said,

3:33absolutely not. So we found someone who knows how to make raw milk safe.

3:39And there's a reason that you want to do that because there's a lot of

3:41good stuff in raw milk.

3:43But I will have Bob Comstock explain that to you.

3:46Bob is the founder and CEO of Tamarack Biotics, and he is here to talk

3:51to us about UV pasteurization.

3:53Right, Bob? Yes, I am, Tudor, and I'm excited to do so.

3:58Yes, explain a little bit about, we hear everything about raw milk, but I don't

4:03think people, we've heard just raw milk is good for you, but I don't think

4:08we understand why. Well, certainly there are a lot of bioactive components in raw milk.

4:15And if you think of what milk actually means, mammals, whether from a human or

4:21a cow, feed their infant and establish an infant's entire immune system through mother's milk.

4:30And we've tried to make it safe using pasteurization for more than 150 years.

4:35It was invented before the Civil War in the United States.

4:39And it does so, but at great expense to the bioactivity of raw milk.

4:44So raw milk has a lot of health benefits, but it is inherently not safe

4:49because it can contain pathogenic bacteria that can be very harmful to people.

4:56So, okay. I've been to many dairies, and I will say that as you are,

5:02as you watch the cows coming in and out and being milked, there is like

5:06this moment where I go, is this all totally safe?

5:09And then they say, oh, it all gets heated up, and it's just below boiling

5:12and everything gets killed. But then you kind of just have a product that you're

5:17drinking that doesn't have as much value as it had when it came out of

5:21the mother cow. So. How do you how do you get that stuff back without

5:27putting people in danger of drinking it?

5:31Yes. So UV pasteurization works by inactivating bacteria and viruses that could be found in

5:39milk, in raw milk. So without getting into all the technical details, it is actually

5:46safer than heat. It kills the bad bugs better.

5:50And it does this while the milk's entirely cold.

5:54So we don't heat the milk at all and we achieve a greater level of

5:59safety than heat does. So this is all just with a UV light.

6:05So what's happening is that as someone who has gone to many dairies, we used

6:11to have a friend that worked at a dairy.

6:15As you watch what is happening in the dairy, you see the milk going through

6:19all of these different processes.

6:20For the UV pasteurization, it's all refrigerated the whole time and it's a thin stream

6:28that's going under the light or how does that work?

6:30Yeah, there's a lot of technology to how you deliver UV light, which is basically

6:36sunshine. So we use the same mechanism by which you can dry apricots in sunlight

6:42and it kills the bacteria that could grow on the apricots and it safely dries

6:48them. So our technology works by, yes, creating a very thin film of fast moving

6:54milk so the ultraviolet light can inactivate the bacteria and viruses and then not heat

7:02the milk at all as it goes through the process.

7:04So this can be used for liquid milk.

7:07We just recently received FDA approval for raw skim milk to be used in dairy

7:15ingredients like milk protein and whey protein concentrates that you can buy at the health

7:20food store, Costco, big bags of whey.

7:23And those ingredients will be much more healthful than they are today.

7:31Interesting. So, OK, but when you say much more healthful, you said healthful, right?

7:36Or did you say healthful?

7:37Healthful, yes. Healthful. That's what I thought.

7:39I'm like healthy. OK, great.

7:41Well, I think it's be helpful for your audience to understand some of the reasons

7:45why this health giving benefits of raw milk and why people are advocating for it.

7:51And a lot of this stems and Tamarack was originally founded because in Europe over

7:57the last two decades, they've shown that children that grow up consuming, as they call

8:03it their farm milk, are protected from developing allergies such as asthma and hay fever

8:10and eczema and food allergies.

8:12And it was very interesting studies.

8:14And some of them were large enough to include over 27 ,000 children in seven

8:20countries. And what they found was the French kids growing up on a dairy and

8:26consuming boiled milk because it's a French culture to follow Louis Pasteur and boil their

8:33milk before drinking it. Whereas German children growing up in a city had access to

8:38farm milk from the village store.

8:40And what these studies found is it wasn't living on the farm that protected children

8:46from developing allergies. It was actually consuming farm milk.

8:50And though I certainly don't advocate for drinking raw milk at any time, particularly in

8:56a distribution system where you're not sure how old the milk actually is and that

9:01gives bacteria an opportunity to grow.

9:04So we, our technology has shown in clinical trials that have yet to be published,

9:11but have already, I've seen the preliminary results, show that UV pasteurized dairy ingredients protect

9:19children from developing allergies like peanut allergy.

9:23And we think that's very exciting for health.

9:27Yes, that's something. Any parent knows that, obviously, we went to school, we were, I

9:35never had a teacher say you can't bring peanut butter and jelly.

9:38We have full peanut free rooms.

9:40We have peanut free lunch areas.

9:42We have, we have been told from the time the kids were little, like they

9:46will send home at the beginning of the year.

9:48These are the food allergies that we have in class.

9:51These are the foods that your students can't bring to our class.

9:54So we are hyper aware as parents today that there are all these different food

9:59allergies. But we also have been told, you know, kids don't have to be lactose

10:04intolerant. They don't have to be gluten free.

10:06There are ways to prevent it.

10:07It wasn't like this in the past, but milk was always pasteurized for as long

10:14as I've been around. So what is it that we've, what else have we missed?

10:19What is it in this?

10:20And when you dry it out, like you're talking about, and it's in these supplements,

10:25is that giving us the same thing that raw milk would be giving if we

10:28were drinking on the farm?

10:31Well, no, not entirely, but there are actually by concentrating some of and removing the

10:38lactose from milk, you can make ingredients that are put into yogurt or cottage cheese

10:45or lots of other dairy products that people can easily consume.

10:50Uh, and... So liquid milk only represents about 9 % of the dairy products produced

10:57today and all these other products from yogurts and cheeses and a myriad of different

11:04products people have in their store shelf to choose from.

11:08And we can make virtually all of those healthier with UV pasteurization by retaining these

11:16bioactive components. So you only have this approved right now for skim milk, right?

11:19Correct. And we're working to expand that approval to colostrum and whey, and those will

11:26take some time. We've been collaborating with the FDA for more than 12 years to

11:32gain this approval that we have so far.

11:34It's the first in the entire world for an alternative to heat for pasteurizing milk.

11:39So this FDA must be much more receptive to something like this.

11:45Yeah, I think they in general have been.

11:47FDA, it's their responsibility to be cautious and careful and protect the public health.

11:53And they have done that very thoroughly.

11:54And they've ensured that we prove that our UV system achieves what's called a five

12:01log reduction. So it's 99 .999 % of all bacteria and viruses that could be

12:08in milk. And we've done that with great scrutiny and detail.

12:13So, yeah, I think the FDA is very excited about the potential for this to

12:18improve the health of the country.

12:19And they've been a good partner through the journey to get this approval.

12:24Well, we've obviously heard quite a bit about the opportunity to have food.

12:29Food is health, right? Food is how you grow.

12:32Food is health care. And that's what we're hearing from this administration.

12:36When you look at what the potential could be for this, I mean, obviously, it's

12:41a big deal for parents to hear.

12:42You could potentially prevent allergies.

12:46What if your kid already has allergies?

12:48What if you are suffering from IBS?

12:50What if you have all of these?

12:51What if you have psoriasis and eczema and all these things that we're hearing about?

12:57What is the potential here with this product?

13:00I don't know all of the remedial abilities, but it's certainly been proven very thoroughly

13:08that raw milk consumption in Europe leads to vastly lower incidence of allergy development.

13:15And in the developed world, half of children born today will develop some form of

13:22allergy, whether it's asthma or a skin allergy or a food allergy.

13:26And that's really sad. And I think that this administration is clearly trying to bring

13:32back food as health -giving medicine.

13:35So we're very consistent with that message, and we're looking forward to eventually having UV

13:42pasteurization be the dominant form of pasteurization of milk.

13:48So you think there's a future where what we're hearing about the benefits of raw

13:53milk could actually be what we're getting at the grocery store?

13:56When I go to the mire and I pick up a gallon of milk, in

14:00the future, there's the potential that that is UV pasteurized, and therefore it hasn't been

14:05heated up. It's not losing a lot of those things that are passed from mother

14:08to baby. There's a chance that this could take off and we could see this

14:13implemented into our dairies. Absolutely.

14:16I think so. Because there's three big reasons, actually.

14:19One is the nutrition story.

14:21And we do retain all of these bioactive components that are in raw milk.

14:28You heard of names like immunoglobulins and lactoferrin and osteopontin.

14:33These are proteins that are found in milk, and we do not damage them.

14:39So, and heat does. So the protective effect for allergies is also, we see this

14:45in improved gut health. And even UC Davis did a clinical trial showing that our

14:51UV pasteurized milk protein concentrate restored immune function in older people.

14:58So we gave people a tetanus shot and looked at how many antibodies they developed

15:03in response to that tetanus shot.

15:05And on average, the people that had consumed the UV product compared to the control

15:11had 120 % more. So more than double the amount of antibodies.

15:16And as you get older, your immune system weakens.

15:19And we know that very well.

15:20And there's no way to restore it until UV pasteurization came around.

15:26So the same mechanism by which a mother imparts immunity to her infant works to

15:31restore immune function in older people.

15:33So we think we're going to keep older people well.

15:37So that's an exciting future for us, too.

15:40And that should reduce a lot of health care costs because, you know, as you

15:45get older, it becomes more and more expensive to keep well.

20:01So obviously you do believe that this is, this is healthcare.

20:05This is food being healthcare and, and improving your system.

20:08So if you can improve your immune system, I mean, that changes things for nursing

20:12homes, that changes things for healthcare, especially for the older generation.

20:17But what have you seen for the younger generation?

20:20What, what really led you to say, gosh, I, I think that we're taking all

20:25the good stuff out of milk and what, what could be the benefit of doing

20:29something different? Yes. Well, I, I think the, there's definitely, I think, benefits for all

20:37generation and even athletes. So sports nutrition will greatly benefit for people in performance recovery

20:44and keeping well, because as you exercise, you actually suppress your immune system rather quickly.

20:51So many athletes, we call it Olympic village fever, where athletes get together with suppressed

20:57immune systems and they all come down with a cold or a flu.

21:00And that's pretty well documented.

21:02And we think we'll be able to keep people's immune systems strong so they won't

21:07fall victim to this. And I, and I forgot to mention tutor that there are

21:11three reasons why I think store shelves will be full of these, uh, UV pasteurized

21:16products in the future. The first one is in the nutrition story.

21:20The second is sustainability because UV saves enormous amounts of energy that it takes to

21:27heat up milk to nearly boiling and then cool it back down to refrigerated conditions.

21:34And milk really doesn't like heat.

21:36It becomes sticky. So if you've ever heated milk in a pot to make some

21:40hot chocolate, you'll notice it sticks to the pot after you've heated it and it

21:45didn't stick before. So what that's showing is these proteins are undergoing what we call

21:51denaturing. They kind of unfold.

21:54And as they unfold, they become more viscous and sticky.

21:58And that challenges dairy operators because they must stop and clean often because of what's

22:06called fouling. So when you use UV pasteurization, not only do you save an enormous

22:11amount of energy, but you reduce the need to clean so often.

22:15And the dairy industry is very excited about this.

22:18I'm actually attending a dairy processing conference this week, and I'll be speaking about UV

22:24pasteurization later today. But the dairy industry in general recognizes that heat is not their

22:30friend, and they're looking forward to having UV pasteurization be fully approved in the U

22:37.S. and being able to utilize its benefits.

22:40And the third area, as I mentioned...

22:41Is anybody doing it outside of the U .S.

22:43right now? We're working with companies in Europe that are preparing installations.

22:47So we're designing systems that will be installed this year.

22:51So we expect to have UV pasteurized products in Europe soon.

22:55But unfortunately... So you don't have to get approval to do that there?

22:58We do. And we've been working in Europe as we have been with the FDA,

23:03particularly the Irish Food Safety Authority for several years.

23:07And they're prepared to fully approve our process in the EU.

23:12Because I was recently in Europe, and when I was over there, I was just

23:17looking around and thinking, people just naturally seem like they are in better shape, better

23:23condition here. I mean, and there is a reality.

23:26Obviously, I know all the stories of America.

23:28We're overeating. We have huge portion sizes.

23:31We aren't exercising. We don't walk places.

23:34So there are those nuances as well.

23:37But their food definitely seems different.

23:39Do you think that they are more receptive to doing something if they see it

23:45as healthier and to making that change faster?

23:48Yeah, I think so. And I think informed consumers here in the United States are

23:53also very enthusiastic about having better nutrition in all regards.

23:57And we do have way too many chemicals in our food.

24:01Unfortunately, we have this grass, generally recognized as safe approval process, that allowed companies to

24:12self -affirm their own safety data about a food chemical and not even notify the

24:19FDA that they were going to use this.

24:21So Senator Marshall, I'm very supportive of his work, has introduced a bill on the

24:27Senate floor to reform the grass or generally recognized as safe process.

24:33And part of that reformation, if you will, is to allow UV to utilize the

24:40grass approval route, which it is not today.

24:43Because isn't there some story where in the 50s, this was approved at some point

24:49and people were using it?

24:52Yes, absolutely. It's actually a very interesting story about vitamin D.

24:56So people had noticed that children, certainly in the northern regions of the United States,

25:03where in the winter, they didn't get a lot of sunlight.

25:06And we didn't understand it, but children would grow up bow -legged with weak bones.

25:11And vitamin D is very important to enable calcium absorption.

25:17And the kids just weren't getting enough sunlight and they weren't getting enough vitamin D.

25:23So this scientist named John Steenbach at the University of Wisconsin in Madison developed a

25:29procedure that increased the vitamin D content in whole milk by shining huge quantities of

25:37vitamin D at the milk.

25:38In fact, it didn't taste very good.

25:40And they used the taste as a measure to make sure the process was effective.

25:44But this process increased the vitamin D content in milk.

25:48And it was utilized in the 1920s and 30s until vitamin D was synthesized.

25:54And since then, it's been added directly to milk, which is easier.

25:57And it certainly doesn't ruin the taste of the milk.

26:00But in the United States and Europe, hundreds of dairies and millions of children consumed

26:07UV -treated milk. And we contend to the FDA that this is evidence of UV's

26:13safety, because certainly clinical trials were done at that time and no adverse effects of

26:18this UV treatment were shown.

26:20So, yeah, it's a funny story to see all these pictures of Borden's incarnation milk

26:25cans say irradiated milk. Oh, gosh.

26:29Yeah, that is kind of terrifying.

26:31So at that time, for those cans of milk, they didn't have any pasteurization that

26:37was heated, correct? Correct. You know, I think they still were often heated, but this

26:43was an additional treatment. Not always treated, but I think most often they were often

26:49heated to do the bacterial reduction.

26:52But, you know, we at that time, the knowledge of germs and bacteria and viruses

26:58was so limited, and we didn't even understand that it was vitamin D that was

27:03increasing in the milk. They just observed this effect in rats and then eventually in

27:08children. That if they consumed this UV -treated milk, they did not suffer this calcium.

27:15see a malabsorption and they had stronger bones.

27:17And it was a widespread use throughout the United States and Europe in that period.

27:23You mentioned a lot of things that I think that we would consider chronic disease.

27:27I mean, even allergies and asthma and eczema, those are all really tough things to

27:34live with. And I believe the parents who have experienced that or the people who

27:39have lived with that would say, yeah, I really wish there had been something.

27:42Do you feel so passionately about this?

27:45Obviously, you've talked about the energy consumption and that that would be down and that

27:50you could actually probably move a lot of product faster through these dairies because you

27:55don't have to have the cleaning process.

27:57But do you think also that this would change chronic disease in the United States?

28:03Absolutely. There's a lot of evidence that chronic disease starts in your gut and people

28:09have been taking antibiotics and eating ultra processed foods so long that their their intestinal

28:16walls are compromised. And we talk about microbiome and gut health.

28:21These are real issues that the scientific community knows lead to a lot of chronic

28:27diseases like MS and Parkinson's.

28:30And we really understand more and more the gut brain axis and how this leads.

28:37If your gut is not healthy, compounds are getting from your food and all the

28:42digestive byproducts into your bloodstream because your gut lining is compromised.

28:48And we have evidence that these UV pasteurized whey products will improve gut health and

28:55potentially reduce chronic disease. When you talk about gut lining and you talk about the

29:00microbiome, I think a lot of people have concerns that if my gut is not

29:05right, how do I get that back on?

29:07Is it possible to get that back on track?

29:09You have this product that is out there with skim milk.

29:12Is that the goal is to improve the microbiome?

29:15And is that something that you can do once you've gotten off track?

29:19Absolutely. And I think that explains the results we saw in that UC Davis trial

29:25is that the intervention group that had been consuming our UV -treated product found double

29:33vaccine responses because their intestinal system was improved and restored to better function.

29:41So that probably explains that benefit that we observed in the clinical trial.

29:47And you think if this were, I mean, I think about the amount of milk

29:50that my kids consume. And if they were, it's hard sometimes for us as parents

29:56to get them to drink the smoothie, to get them to take the vitamin.

29:59But if this were something that were on the grocery store shelves, that this is

30:02how milk came to us, that would be a huge improvement.

30:06But then there's also the opportunity to have it in supplements, to have it in

30:11stores that are selling foods, that are selling smoothies, that are selling health foods.

30:16Do you see that as the, there's like a huge market in both areas, whether

30:20it is the direct to market milk, or it's the after products where we're still

30:25looking to increase, we're still looking.

30:28I mean, I will say, I look at my kids, they drink a lot of

30:31milk. I am not as big of a milk drinker as an adult.

30:34I don't find myself whipping up some chocolate milk.

30:37I don't drink and grab a glass of milk before I go to bed.

30:40That's just not in my mindset.

30:42So I would be, I would be more in the category of someone who's looking

30:46to get this without having to have it in my, have it as a nightly

30:51glass of milk. I'm in the same category, quite frankly.

30:56No, so it's not necessarily for the drying process.

30:58I think dairy manufacturers will be using our technology for yogurts and cottage cheese and

31:07all sorts of dairy products.

31:09We'll utilize this eventually. And we're working towards the gaining that regulatory approval necessary for

31:15all different dairy products. But yeah, I certainly don't drink as much milk.

31:19It's in my coffee and rarely will I have a glass of milk, but I

31:23do consume a lot of yogurt and cottage cheese.

31:26Yeah, I guess I don't think I do have a lot of dairy.

31:29I have dairy. I'm a big fan of cheese.

31:32I have one kid that is absolutely, totally opposed to cheese.

31:35So thank goodness she drinks milk.

35:30on their lip and that was like the big conversation milk was a big conversation

35:33i think milk went through a little bit of a phase where it was demonized

35:37by people who are like oh you've got to have oat milk and then we

35:39found out that oat milk is like just drinking seed oil so we went back

35:44to real milk and now you have the secretary of health talking so critically about

35:51milk and going out and doing workout videos maybe a little weird drinking milk in

35:56the hot tub i don't know that was strange but obviously making a point that

36:00milk is very important so my question to you about this is if you could

36:06talk to hhs or if you could talk to the fda what would you tell

36:10them today that you need well we there's still a regulatory hurdle we have to

36:16get through with the fda in 1958 congress enacted the food additive act and wanted

36:23to regulate ionizing radiation because it was the dawn of the nuclear era and people

36:29were just learning what it could do so they wanted to regulate and in parentheses

36:34and all of the subcommittee transcripts it says gamma rays x -rays and radio isotopes

36:41so ultraviolet light like infrared or your microwave oven is non -ionizing radiation and it's

36:49very common the sunlight is a huge bandwidth of ultraviolet light so only the united

36:56states has a regulation that governs allowed uses of ultraviolet light and food and this

37:01unfortunately inhibits safety so our food supply would be safer if we could use uv

37:07for a lot of different products and uh senator marshall's bill would enable that uh

37:14we're we're working with the fda also because of this prior use in the 1920s

37:19and 30s we believe that qualifies it what's called a prior use exemption and we've

37:25filed with the fda to to gain that approval once we have those steps and

37:30we have to still amend something called the pasteurized milk ordinance that governs interstate milk

37:36shipments and we're in the process of doing that also so once we have all

37:40of the final hurdles done i think your dairy shelf will be exclusively uv pasteurized

37:46products in perhaps 15 years from now and we are well on our way to

37:52kicking the chronic disease in the united states once that happens that excites me that

37:59is very exciting to me um i we will do our best to pass this

38:04along to our friends over at the fda and over at hhs to me it

38:09is very it is very it is It's incredibly interesting to know that there are

38:13foods in our environment that are healing and that we're not taking, we're not using

38:17them to the greatest benefit.

38:19In politics, we have a saying, it's sunlight is the best disinfectant.

38:23Apparently, we should have it in health food too.

38:25We should have it in our milk.

38:27Yes. Yeah. Liquid sunshine. I mean, why wouldn't we be drinking that?

38:31Yes, it is. It's entirely safe.

38:35And I assume raw milk people will be curious and concerned about adding sunlight to

38:40milk. But it retains all of raw milk's goodness and makes raw milk safe.

38:47I mean, I understand what you're saying.

38:50I also think that there are a group of people who, even when I talk

38:54to health food nuts, they're like, oh, yeah, you have to be really careful with

38:59the raw milk. Like, if you don't understand it, if you don't know what you're

39:02getting, you have to be really careful.

39:04And that, for someone like me, it genuinely freaks me out because I'm like, I

39:09don't even know what that means.

39:10Be careful with your milk.

39:11You know, I'm like, I don't know.

39:12Will the kids leave it out on the counter and then we're all going to

39:14end up dying? You know, I mean, it is kind of a scary thing when

39:17you think about it. So I think maybe if you are hardcore and you understand

39:21it. But my experience is that community has wanted to share, but they want to

39:26share it in a safe way.

39:27And you're telling me that essentially your product is going to share all of the

39:32benefits of raw milk with none of the scary parts.

39:35Exactly. And we're very excited to bring that health giving technology to the consumers and

39:43make raw milk available and safe.

39:46And I think the I guess one of the most surprising things that we've learned

39:51in all this is actually how powerful milk is.

39:55And to appreciate all of the bioactivity of milk that that's been unfortunately degraded by

40:02heat. I think the clinical research in the future will show, yes, this is actually

40:08more healthy than we ever appreciated because we never no one would do a clinical

40:12trial on people with raw milk.

40:14It would never be approved.

40:15So this is a first chance for us to see the power of raw milk

40:19in a safe way. And the people that consume raw milk today are actually not

40:25wrong in its health giving properties.

40:28It's just dangerous. And people have died because of raw milk.

40:32So that's kind of Russian roulette.

40:34I certainly wouldn't play with my children or or my my parents.

40:39That would not be not be wise.

40:41But you mentioned Parkinson's, you mentioned potentially multiple sclerosis, MS, that this could improve.

40:50I mean, we just saw what happened with Eric Dane and ALS.

40:54I think that there's so many people that are saying, why are these things happening?

40:57And if we could study it more and we could find a source within our

41:01own food system that could make us healthy.

41:03That's what so many Americans are looking for.
